Tasting Notes: So this is how it should be. Kaffir lime leaf, grapefruit pith and tinned pineapple, with lots of white florals on the nose. It’s waxy and bright on the palate, without a hint of oil or too much ripeness. That classic central-Italian bitterness and a lick of salt finish up. This is tight, classy pecorino and definitely worth a look. All parcels of juice were fermented in stainless steel tanks. 3 months ageing in stainless steel.
